Ruby’s, which opened in Chicago’s Bridgeport neighborhood in Dec. 2008, features Memphis-style barbecue paired with hearty house-made side dishes and soups. The carryout-focused eatery features entrée selections such as dry-rub marinated, slow-baked and basted baby back ribs; herb-marinated rotisserie oven-roasted chicken; and low-and-slow roasted beef brisket. Savory side dishes include rich macaroni and cheese made with cavatappi pasta, Cheddar and Parmesan cheese; BBQ spaghetti with barbecue sauce and pulled pork; and oven-roasted baked beans with bacon and molasses.
